1) 갈비치킨
25분만에 완성하는 류수영 갈비치킨
■ 재료
닭볶음탕용 닭 10호(1kg), 대파 2대, 마늘 한줌, 소금 세 꼬집, 생강 한톨,
설탕 1T, 간장 3T, 굴소스 듬뿍 1T, 물엿 6T, 통깨
■ 조리법
[재료 준비]
1) 닭볶음탕용 닭 날개 끝부분은 제거하고, 닭다리는 아킬레스건 부분을 자른다.
2) 손질한 닭은 흐르는 물에 씻어 불순물을 제거하고, 키친타올로 물기를 닦는다.
※ 닭에 물기가 있으면 구워지지 않고 쪄질 수 있으니 물기를 잘 제거해주세요!
3) 대파 2대는 4~5cm 길이로 어슷썬다.
4) 생강 한톨은 편 썬다.
1. 강불에서 충분히 예열한 팬에 준비한 닭을 껍질부터 넣고 소금 세 꼬집을 뿌려 강불에서 3분 정도 굽는다.
※ 닭을 구울 때 뒤적이지 마세요!
※ 닭에서 기름이 나오므로 따로 기름을 두르지 않습니다!
2. 중불로 줄이고 닭을 뒤집은 뒤, 뚜껑을 덮고 3분 정도 굽는다.
3. 편 썬 생강을 넣고, 뚜껑을 덮고 닭을 10분 정도 더 굽는다.
※ 닭이 타지 않게 중간 중간 뒤적이면서 눌어붙은 곳을 긁어주세요!
4. 마늘 한줌, 어슷 썬 대파를 넣고 잘 볶아준다.
5. 닭고기에 설탕 1T를 넣고 잘 섞어준다.
6. 닭과 채소를 한쪽으로 몰고, 빈 공간에 간장 3T를 넣어 살짝 태우듯이 끓이고 섞어준다.
7. 굴소스 듬뿍 1T, 물엿 6T를 넣고 잘 섞는다.
8. 약불로 줄이고 뚜껑을 덮어 5분 정도 뜸 들인다.
9. 그릇에 갈비치킨을 담고 깨를 넉넉히 뿌려 마무리한다.
※ 총 조리시간은 25분을 넘기지 않아야 부드러운 닭을 드실 수 있습니다!
